Carrot Chutney



INGREDIENTS:

Grated Carrot - 1 Cup
Onion - 1 No.
Red Chilli - 1 No.
Salt - to taste

For seasoning:

Oil - 1 tsp
Mustard - 1/2 sp
Cumin Seeds - 1/2 sp
Asofoetida - A pinch
Curry leaves - 1 sprg

PREPARATION:

1)Heat oil in a pan. Add red chilli, onion, grated carrot and saute till the raw smell goes out
2)Grind the mixture with salt added
3)For seasoning, heat oil in a pan, add mustard, cumin seeds, asofoetida & curry leaves
4)Add the seasoned mixture to the Chutney.

Onion Tomato Chutney


INGREDIENTS:

Onion - 1 No.
Tomato - 2 Nos.
Red chilli - 2 Nos.
Salt - to taste

For seasoning:

Oil - 1 tsp
Mustard - 1/2 sp
Cumin Seeds - 1/2 sp
Asofoetida - A pinch
Curry leaves - 1 sprg

PREPARATION:

1)Grind Onion, Tomatoes, Red chillies & salt(Don't add water) to smooth paste
2)Heat oil in a pan. Add mustard, cumin seeds, asofoetida & curry leaves
3)Once the mustard splits, add the ground paste
4)Close & cook for 30 minutes or until the chutney becomes thick.

Tamilnadu Chicken Biriyani


INGREDIENTS:

Chicken - 1/2 lb
Basmati Rice - 2 cups
Onion - 1 No.
Tomato - 1 No.
Mint Chopped - 1/2 cup
Coriander Chopped - 1/2 cup
Green Chillies - 3 Nos.
Ginger & Garlic Paste - 1 tsp
Lemon juice - 1/2
Turmeric powder - 1/2 tsp
Chilli Powder - 1 tsp
Biryani Masala Powder- 2 tsp
Bay leaves - 2 Nos
Cloves - 3 Nos
Cardamom - 2 Nos
Cinnamon - 1 No
Curd - 2 tsp
Oil - 4 tsp
Salt - to taste


PREPARATION:

1)Soak rice for 20-30 minutes and keep aside

2)Marinate chicken with turmeric & lemon juice for at least 1 hour

3)Heat oil in a heavy bottom pan. Add Bay leaves, Cloves, Cardamom & Cinnamon

4)Add Onion, Green chillies, Ginger & Garlic paste and saute

5)Add Mint leaves, Coriander leaves, tomato and saute for few minutes

6)Add the marinated chicken and saute for 5 minutes

7)Add Biriyani masala powder, Chilli powder, curd & salt

8)Add 3 cups of water and cook for 20-25 minutes(until the chicken is half done)

9)Now add the soaked rice, close and cook for 10 minutes on medium heat and another 15-20 minutes on low heat.

10)Garnish with Chopped coriander leaves & serve.

Easy Puff(Khari) Biscuit


 


INGREDIENTS:

Puff Pastry sheet


PREPARATION:

1)Cut puff pastry sheet into small pieces.

2)Twist the pieces to the shape as pictured above and place it in a greased baking tray

3)Optional - You can sprinkle cumin seeds over the pastry pieces if you like.

4)Preheat the oven to 400 degrees. Bake for about 30-40 minutes or until its done.


Veg Pulao Recipe







INGREDIENTS:

Rice - 1 cup
Onion - 1 No.
Green chillies - 5 Nos.
Carrot - 1 No.
Beans - 4 Nos.
Peas - 1/4 cup
Ginger & Garlic paste - 1 tsp
Chopped mint - 1/4 cup
Chopped coriander leaves - 2 tsp
Cloves - 2 Nos.
Cardamom - 1 No.
Bay leaves - 2 Nos.
Cinnamon - 1 No.
Oil - 2 tsp

PREPARATION:

1)Soak rice for 20 mins and keep aside.

2)Heat oil in a pan. Add Cloves, Cardamom, Cinnamon & Bay leaves

3)Add chopped onion, ginger & garlic paste and saute for few minutes

4)Add chopped mint leaves, coriander leaves and saute

5)Add cut vegetables and fry for few mins

6)Add salt and two cups of water

7)When the water start boils add the soaked rice

8)Cook on medium flame for 15 - 20 mins
