Prawn Briyani

INGREDIENTS:

Prawn - 1/2 lb
Basmati Rice - 2 cups
Onion - 1 No.
Tomato - 1 No.
Mint Chopped - 1/2 cup
Coriander Chopped - 1/2 cup
Green Chillies - 3 Nos.
Ginger & Garlic Paste - 1 tsp
Lemon juice - 1/2
Turmeric powder - 1/2 tsp
Chilli Powder - 1 tsp
Biryani Masala Powder- 2 tsp
Bay leaves - 2 Nos
Cloves - 3 Nos
Cardamom - 2 Nos
Cinnamon - 1 No
Curd - 2 tsp
Oil - 4 tsp
Salt - to taste


PREPARATION:

1)Soak rice for 20-30 minutes and keep aside

2)Marinate prawn with turmeric, salt, chilli powder(1/2 tsp) & lemon juice

3)Heat oil in a heavy bottom pan. Add Bay leaves, Cloves, Cardamom & Cinnamon

4)Add Onion, Green chillies, Ginger & Garlic paste and saute

5)Add Mint leaves, Coriander leaves, tomato and saute for few minutes

6)Add the marinated prawn and saute for 5 minutes

7)Add Biriyani masala powder, Chilli powder, curd & salt

8)Add 3 cups of water and cook for 20-25 minutes

9)Now add the soaked rice, close and cook for 10 minutes on medium heat and another 15-20 minutes on low heat.

10)Garnish with Chopped coriander leaves & serve.

Mutton Briyani


INGREDIENTS:

Mutton - 1/2 lb
Basmati Rice - 2 cups
Onion - 1 No.
Tomato - 1 No.
Mint Chopped - 1/2 cup
Coriander Chopped - 1/2 cup
Green Chillies - 3 Nos.
Ginger & Garlic Paste - 1 tsp
Lemon juice - 1/2
Turmeric powder - 1/2 tsp
Chilli Powder - 1 tsp
Biryani Masala Powder- 2 tsp

Cardamom - 2 Nos
Cinnamon - 1 No

5)Add Mint leaves, Coriander leaves, tomato and saute for few minutes

6)Add the cooked mutton and saute for 5 minutes

7)Add Biriyani masala powder, Chilli powder, curd & salt

8)Add 3 cups of water(use the mutton cooked water) and cook for 20-25 minutes

9)Now add the soaked rice, close and cook for 10 minutes on medium heat and another 15-20 minutes on low heat.

10)Garnish with Chopped coriander leaves & serve.

Chicken 65


INGREDIENTS:

Chicken - 1/2 lb

Chilli powder - 2 tsp

Besan Flour - 1 tsp

Rice flour - 1 tsp

Corn Flour - 1 tsp

Turmeric - a pinch

Pepper - 1/2 tsp

Salt - 1 tsp

Lemon juice - 1 tsp

Curd - 1 tsp

Food colour (optional)



Oil - to fry

Coriander leaves - to garnish



PREPARATION:

1) Mix chicken with all the ingredients and keep aside for minimum 2 hrs

2) Heat oil in a pan and fry the chicken pieces to golden brown

3) Garnish with Coriander leaves

How to make soft Chapati?


INGREDIENTS:

Wheat flour - 2 cups

Salt - 1 tsp

Water - 1 cup

Oil or ghee - 2 tsp

PREPARATION:

1) Mix salt n wheat flour

2) Add hot water to the wheat flour and knead gently

3) Add 2tsp of oil or ghee to the chapati dough and mix well

4) Keep it covered for minimum 1 hr

5) Make golf sized balls out of the dough and roll it to make soft chapatis

Cauliflower Pakora

INGREDIENTS:

Cauliflower - 1/2 lb

Chilli powder - 2 tsp

Besan Flour - 1 tsp

Rice flour - 1 tsp

Corn Flour - 1 tsp

Turmeric - a pinch

Salt - 1 tsp

Food colour (optional)



Oil - to fry

Coriander leaves - to garnish

1) Mix Cauliflower with all the ingredients and keep aside for minimum 30 minutes

2) Heat oil in a pan and fry the chicken pieces to golden brown

3) Garnish with Coriander leaves
